Placing signs with existing text now opens editor, causing components to be flattened when closed #14311
Description
Expected behavior
I would expect the sign copied using LCtrl + Middle Click to be the exact same sign as the sign I manually created?
Observed/Actual behavior
The copied sign losses it's colors entirely, or the formatting on the sign gets messed up.
Steps/models to reproduce
Create any sign using any method of creating the sign, commands or custom plugin, then copy the sign and place it.

This is also reproducible in singleplayer worlds on version 26.3, so this is fault from Mojang.
