This PR upgrades Iroh to version 1.0.
Still unsolved: chatmail relays don't have Iroh 1.0 relays (will likely need a separate IMAP METADATA entry to request them, better discussed in chatmail/relay issue chatmail/relay#1010) and backwards compatibility (we will need to ship both iroh 0.35 and iroh 1.0 for backup transfer compatibility, or say that users need to upgrade to the version using iroh 1.0 on both sides for backup transfer to work).
We also need to use our own TLS verification, it is possible since iroh 1.0. includes n0-computer/iroh#4300
