Keep the Windows test image on the bumped Gradle version
When ./gradlew test runs on Windows, gradle/docker-test.gradle delegates the suite to server/docker/Dockerfile.unit-test, whose explicitly synchronized GRADLE_VERSION and checksum remain pinned to 9.4.1. Consequently, Windows tests still execute under 9.4.1 rather than the newly selected 9.7.1 and can miss version-specific failures; update that image's version and binary-distribution checksum as part of this bump.
